Ella's Salads
Note 1: The taste of any salad is in it's dressing. I never use store bought ones. Secret here is a balance between acidity and sweetness and using a very good quality olive oil - I prefer cold press extra virgin varieties. Proper proportion of any dressing is half acid (such as lemon juice or vinegar and same amount of oil + 1/2 teaspoon or more of agave or maple syrup or liquid honey.

Note 2: Another secret is roasting your nuts. Nuts bring character to your salads and they taste the best when the essence, oil released with heat. Roast them in a oven for 5-10 minutes, or fry them - make sure you shake them well, watch over them and do not burn. They are ready when golden and you can smell the aroma.
Apple, Pecans and Blue Cheese Salad
Ingredients

Greens, such as arugula, mesclun, spinach or any other mixed greens of your choice

1 Granny Smith Apple
-
1/4 of a cup roasted pecans or walnuts
-
Blue cheese
-
Salt and pepper

Dressing:
1/2 cup good olive oil
1/2 cup apple cider vinegar
1 tsp of agave syrup or liquid honey (or more to taste)
Note: This salad can be make with goat cheese instead
Greek Salad
Ingredients

Greens, such as arugula, mesclun, spinach or any other mixed greens of your choice

1 Pint of Cherry tomatoes
-
1 Cucumbers
-
1 Sweet Pepper
-
Calamata or green olives
-
Sweet onion sliced in thin rings
-
Feta cheese
-
Parsley
-
Salt and pepper

Dressing:
Juice of 1 lemon
Same amount of olive oil
1 tsp of agave syrup or liquid honey (or more to taste)

Sweet Potatoes and Pears Salad
Ingredients

Greens, such as arugula, mesclun, spinach or any other mixed greens of your choice

1 cup sweet potatoes (previously roasted)
-
1 Sweet Pear
-
Sunflower seeds
-
Salt and pepper

Dressing:
1/2 cup good olive oil
1/2 cup Champaigne vinegar
1 tsp of agave syrup or liquid honey (or more to taste)
Mango Salsa
Ingredients
-
4-6 fresh mango cut in small cubes
-
2-3 medium size cucumbers cut in small cubes
-
4-5 green scallions
-
2 jalapeno pepper without seeds cut small
-
1/2 cup of parsley
-
1 cup of mint
-
1 cup of fresh corn kernels (in season) or cooked frozen corn

Juice of 1 or 2 lemons (or 3-5 limes)
Same amount of olive oil

Guacamole
